現(xiàn)代儀器分析技術在白酒感官評價研究中的應用

摘 要:通過分析總結概述一些現(xiàn)代分析技術(主要是GCMS技術電子鼻技術和電子舌技術等)在白酒感官評價研究中的應用,可以看出,儀器在進行感官評價時具有一致性客觀性等優(yōu)勢, 已為科技人員所關注雖然傳感器選擇數(shù)據(jù)方法分析數(shù)據(jù)庫建立等復雜問題尚需解決,但以儀器集成化發(fā)展為基礎的定量化標準化和科學化是今后白酒品評發(fā)展的必然趨勢
